Hello everyone! I’m Chase Merfeld, a passionate Dietitian hailing from the small but vibrant state of South Dakota. My mission is to make evidenced-based nutrition information easily accessible to all. In today’s world, we’re often inundated with misinformation about diet and lifestyle, and it’s essential that we combat this with research, evidence, and good old-fashioned common sense.

Writing has always been a deep passion of mine, and I’m not shy about sharing my thoughts on the subjects that truly matter. On this platform, I’m thrilled to blend my insights on wellness and healthy living with my love for photography. Additionally, my wife and I are embarking on an exciting venture—a clothing line designed specifically for healthcare workers, featuring a few fun and stylish pieces.

Recipe of the Month

Deb’s Mediterranean Harvest

Ingredients:

  • 1 cup dry quinoa

  • Roasted vegetables (recommended: Costco Primavera)

  • 1 can chickpeas, drained and rinsed

  • Hummus (your choice of brand or homemade)

  • Crumbled feta cheese

  • Olive oil

Instructions:

  1. Cook quinoa according to package (1 part quinoa to 2 parts water).

  2. Roast vegetables and chickpeas on a baking sheet or in an air fryer at 400°F for 20–25 minutes.

  3. Assemble bowl: Add quinoa, roasted vegetables, chickpeas, a dollop of hummus, and crumbled feta. Drizzle with olive oil.


    Optional: Add hot sauce or seeds for extra crunch.
